I thought most sourdough recipes required a "starter" rather than yeast to get the fermentation process going.

The "starter" is a little bit of dough from the previous batch that contains live yeast. Each time you make a new batch you reserve a little bit of the dough to be the starter for the next batch. Over time, the yeasts evolve and go wild and you end up with bread that has flavors unique compared to anything made with commercial yeast.

I think my Dad accidentally let it die out but I was raised on sourdough pancakes that were made from starter that traced its routes back to the famous Robert Peary expedition to the North Pole in 1909.

I guess I don't know but I always assumed that sour dough bread was made from a starter similar to pancakes.

Crap, first I comment on a blog about Latin food and now I'm talking about pancakes. Now I am REALLY hungry!
